Out of 1 kg of pine cones one can obtain 250 g of in-shell pine nuts and 80 g of shelled pine nuts. Together with basil, garlic, olive oil and parmesan, pine nuts are a fundamental ingredient of “pesto”, the worldwide known sauce for Italian pasta, typical of the region Liguria. Pine nuts can be used to garnish cakes, to prepare cakes, first course dishes and ice cream.
Pine nuts, as all dreid fruits in general, are high in proteins and many other nutritional substances like zinc, vitamin B2, potassium and vegetal fiber. They contain substantial quantities of calcium, magnesium, vitamin E, iron. Ideal for sportmen, as they are naturally high in fats (more or less 50 – 60 % of their weight) and unsaturated fatty acids, among which linoleic acid: they are indeed perfect as supplments for those who play sports or face stressful and tiring periods.
