Almond cake
Ingredients
- 200 g sugar
- 80 g of flour
- 125 g potato starch
- 100 g of blanched almonds
- 4 eggs
- one lemon
- salt
- ½ sachet of vanilla-flavoured baking powder
Procedure
Combine the 4 egg yolks with 4 tablespoons of boiling water and two-thirds of the sugar, and mix everything together in a bowl. Add the grated lemon zest and mix again until the mixture is light and fluffy.
Finely chop the almonds and add them to the mixture.
Sift the flour together with the potato starch and baking powder, then add them to the mixture, stirring continuously.
Separately, whisk the 4 egg whites until stiff, then fold them in with the rest of the sugar and a pinch of salt.
Pour the mixture into a greased cake tin and bake in the oven at 180°C for about 30 minutes.
If you like, you can decorate the cake with flaked almonds or icing sugar.
