This seed is typical of the Middle East, where it was cultivated since prehistoric ages, especially in Persia (today Iran). Another area typically known for pistachios is California (USA).
The tree of pistachios has a two-year cycle (it means that a plentiful harvest is followed the next year by a scarce harvest and so on). It has no limits in terms of age as what concerns its reproductive power. The fruits have to be cleaned once harvested, then selected and toasted as quickly as possible.
Pistachios are rich in vitamin A, B1 (tiamin), B2, B3, B6, C. They contain iron, phosphorous, manganese, potassium and copper. Thanks to the high content of vitamin E, especially gamma-tocopherol, pistachios help the natural protection of the cardiovascular system. They naturally increase the health of smokers’ heart. As they contain monounsaturated and polyunsaturated fats, they lower the presence of bad cholesterol in blood (LDL). Beneficial effects have been noticed even against another widespread disease, type 2 diabetes. Pistachios provide for a first-class help against cancer.
