- 200 g of sugar
- 80 g of flour
- 125 g of potato starch
- 100 g of peeled almonds
- 4 eggs
- 1 lemon
- ½ sachet of vanilla-flavoured baking powder
Stir together 4 yolks, 4 teaspoons of hot water and 2/3 of sugar in a bowl until thoroughly combined. Add grated lemon rind and mix until spumy.
Mince almonds thinly and add them.
Add potato sturch and vanilla-flavoured powder to the flour, and pass the whole into a sieve. Then, add them to the mixture, keeping blending.
In another bowl, whip up the egg whites, and then add them to the mixture, together with sugar and a pinch of salt.
Pour the mixture in a greased cake pan, and put it in the oven at 180° C for about 30 min.
If you like to, garnish the cake with almond slices or icing sugar.
